Lotus cheesecake shots

30g Melted butter

80g Crushed Lotus biscuits

180g Cream Cheese

90g Lotus Biscoff spread

30g Icing sugar

1. Mix melted butter with crushed lotus biscuits. 

2. Spread an even layer of biscuits in individual glasses or a dish. (Double recipe for a large dish)

3. With a whisk or electric beater beat cream cheese, lotus biscoff spread and icing sugar till smooth and creamy.  

4. Pour cream cheese mixture over biscuit base. Decorate as desired. 

5. Refrigerate for 1 hour to set. 

NOTE: Lotus biscoff spread can be substituted for nutella to make Nutella cheesecake. Lotus biscuits can be substituted for any available biscuits.
