Shakshuka is great for breakfast or brunch! It’s delicous and super easy to make. We asked Uzma Rao of Lemon craze to share her recipe and we gotta say, we loved it.
5 tomatoes, diced
1 onion, diced
1 bell pepper, seeded and diced
4 garlic cloves, finely chopped
2 tsp salt ( or as per your liking)
1 tsp pepper
2 tsp chili flakes
Fresh parsley, chopped
Add olive oil to the pan on medium heat, then add onion & bell pepper & sauté on medium heat for 5 minutes.
Add garlic and spices. And toast for one minute
Stir in diced tomatoes and simmer for 10 minutes
Create small wells in the mixture and crack an egg into each well
Cover the pan and cook for 12-15 minutes on low heat.
Garnish with chopped parsley
Serve hot with Sourdough bread . Enjoy!
