2 delicious recipes that are super easy and super yum!

Appletini Mongolian chicken and broccoli stir-fry

• Chicken 1 KG | Vegetable oil tbsp
• Garlic 4 cloves, roughly chopped
• Ginger half piece sliced
• Green chilies, 4 cut into small pieces
• Broccolini, sliced in half 300 grams
• Spring onions 2 roughly chopped
• Steamed rice, to serve

• Soy sauce 2 tbsp | Apple juice 2 tbsp
• Corn flour 1 tbsp | Red chili powder 1 tbsp
• Black pepper 1 tbsp | Baking soda 1 tbsp

Stir-fry sauce:
• Oyster sauce ½ cup | Soy sauce ¼ cup
• Sugar 4 tsp | Black pepper 1 tsp | White vinegar 3 tsp


  1. Combine the chicken with the marinade ingredients and mix well.
  2. Allow to marinate for only a few minutes.
  3. For the stir-fry sauce, add the stir-fry sauce ingredients and mix to combine and set aside for later.
  4. Heat the oil in a wok or large frying pan over medium-high heat.
  5. Add the garlic, ginger, green chilies and spring onions.
  6. Stir-fry for 10 seconds then add the chicken and allow to sear for a 3-4 minutes.
  7. Add the broccoli and stir-fry for a minute.
  8. Then add the stir-fry sauce and stir-fry until sauce is thick and glossy.
  9. Top it off with toasted sesame seeds and spring onions.
  10. Serve with steamed rice.
  11. Enjoy!

Molten Lava Cake

• Butter 60 grams
• Semi-sweet or dark 70% cocoa chocolate 60 grams
• Powdered/ Icing sugar ½ cup
• Egg yolk 1
• Egg 1
• All-purpose flour 3 Tbs
• Vanilla extract ¼ tsp
• 2” deep ramekins


  1. Preheat oven at 200 C.
  2. Add butter and chocolate in a bowl and microwave for 30 seconds until butter and chocolate melt.
  3. Add egg yolk and egg, whisk well.
  4. Stir in flour.
  5. Add vanilla extract and give it a good mix.
  6. Grease your ramekins with butter.
  7. Add some coco powder to cover the insides and dust the excess.
  8. Add mixture in the ramekins.
  9. Bake at 200 C for exactly 14 minutes.
  10. Remove from oven when the cake separates from the sides and is soft in the center.
  11. Let the cake cool down for 3 minutes and invert the cake on a plate while it’s warm.
  12. Top it off with icing sugar/ strawberries/ or chocolate sauce and serve with ice cream or cold whipped.
  13. Stir in the sugar until well blended.
