Cook up a storm!

Salwa Gardezi jots down 3 easy to make recipe’s while in lockdown.

Beet salad with spinach, roasted cashews and kale chips
 
150g baby spinach leaves 
2 medium raw beet, peeled 
1/4 cup pomegranate seeds
1/2 cup roasted cashew nuts 
 
Dressing
2 medium blood oranges 
1tbsp chopped mint
1/2 minced onion 
1 1/2 tablespoon white vinegar 
3/4 cup olive oil
Pinch of salt and pepper 
 
Method 
Add baby spinach, sliced cooked beets, pomegranate seeds and roasted cashews to a large bowl. Pour the salad dressing over the beet salad and combine. Top with cream cheese and Parmesan. For the dressing, combine zest and juice of blood oranges, chopped mint , onion, white whine vinegar, and a pinch of salt and pepper in a jar. Pour olive oil, seal the lid and shake to mix together.

Classic Italian sauce with spaghettis
 
Ingredients 
Tomato sauce 
Tomatoes 1/2 kg 
Garlic 4 cloves 
Olive oil 50 ml
Basil leaves 10 
Oregano 1 teaspoon 
Salt 
Boiled spaghetti 500g 
 
Method
Blanch tomatoes, and peel the skin. Blend the peeled tomatoes. 
Heat oil in a saucepan, add garlic, sweat. Add tomato purée, basil and simmer to get the right consistency. Mix the boiled spaghetti’s in or serve on top. 

Skinny beef burger 
 
Ingredients 
1/2 kg minced beef
3 tbsp soya sauce
3 tbsp worsterchire sauce 
3 tbsp yogurt 
2 tbsp caramelised onions (1 small onion chopped finerly & sautéed with 1 tsp soya sauce & 1 tsp sugar) 
1/2 cup bread crumbs ( enough to make the party come together) 
Salt and pepper to taste 
 
Method 
Add all ingredients for sliders in a food processor and blitz for 2-3 minutes. 
Make the patties, 
Wrap the lettuce leaves around the patty and serve with lite mayo.
