Ayeda’s Cherry Tomato Linguine

1-1.5lb cherry tomatoes

200 grams of linguine (boiled) 

5 garlic cloves, chopped 

50g fresh button mushrooms, chopped

1 tsp chilli flakes

1/2 tsp oregano

1/2 tsp salt 

1/2 tsp pepper 

1/2 tsp sugar 

1 sprig of basil 

2 tbsps olive oil and 2 tsps butter 

Fresh mozzarella 

Melt the butter and oil. Add the chopper garlic cloves, and mix well for 2 minutes but don’t let it brown). Add the mushrooms and sauté for a another 2 minutes till semi-cooked. Add the cherry tomatoes and mix till they begin to burst which takes 4-5 minutes. Smash some but not all tomatoes with the back of a wooden spoon to help create a sauce, and continue to cook till it’s a chunky sauce. Keep cooking for another 5-7 minutes. Add the salt, pepper, chill flakes and oregano. Taste and adjust, adding 1/2 tsp sugar if the sauce is too tart. Stir in the boiled pasta and top with bits of mozzarella!
